About this wine
Character
The Sancerre blanc "Guigne-Chèvres" 2021 is a pure Sauvignon Blanc from a single vineyard in the Sancerrois. It shows closed and deep at first, yet remains fine and elegant throughout. The cool structure of the 2021 vintage is noticeable in every sip.
Terroir and origin
The Guigne-Chèvres vineyard lies on a gently sloping hillside facing north-east. The soil consists of red clay over caillottes, the marly Oxfordian limestone typical of the Jura. Domaine Vacheron in Sancerre farms 46 hectares of vineyards and is run by cousins Jean-Dominique and Jean-Laurent Vacheron.
Grape variety and vinification
Sauvignon Blanc from vines nearly 40 years old. The single vineyards are vinified separately; this wine ages for ten months on the lees in Stockinger foudres. Jean-Dominique gained his experience at Châteauneuf-du-Pape, Jean-Laurent with Aubert de Villaine.
On the palate
Plenty of pressure and tension run through a powerful body. A touch of sweet stone fruit meets elderflower, lime, apple and green pear, alongside salt, a touch of pepper, kitchen herbs and fennel fronds. The tension carries through to the long finish.
Food pairings
With lobster à l'Armoricaine, smoked eel with young artichokes, nettles and beurre blanc, or tabbouleh with grilled fennel, goat's cheese and nana mint.
Special features
On the nose, stone, salt, iodine and oyster shell come forward ahead of the vintage's green notes. Such a cool vintage is likely to become rare in Sancerre in the future, making this bottle a true document of its time.
