About this wine

Character

A sharply defined Sauvignon Blanc in which both the grape variety and the flint terroir come through with equal clarity. Fresh, green and remarkably precise, energetic rather than austere.

Terroir and origin

Les Romains is one of Domaine Vacheron's classic single vineyards, located on the eastern flank of Sancerre. The vineyard is defined by silex, the flint characteristic of part of the appellation. It stores heat and gives the Sauvignon Blanc a taut, smoky, mineral signature. The family estate spans 46 hectares and has been BIODYVIN-certified since 2005, among the first in the region.

Grape variety and vinification

Pure Sauvignon Blanc, vinified dry, 12.5% vol. Fermentation and ageing take around ten months in a combination of Stockinger foudres and barriques. The estate is run by cousins Jean-Dominique and Jean-Laurent Vacheron, the fourth generation since founder Maurice Vacheron; the single vineyards are vinified separately.

On the palate

Almost weightless at first, then gaining tension and structure. A vibrant acidity runs through the juicy green fruit, joined by garden herbs, lime and pronounced mineral spice. Fine creaminess and a silky texture hold the balance, before the wine tightens toward the finish, where the smoky flint signature emerges alongside saline minerality. The aftertaste is long and mineral.

Food pairing

Scallops and oysters, grilled sea bass or hake with fresh herbs, plus goat's cheese, classically as Crottin de Chavignol.

Notable features

Flint single vineyard farmed biodynamically, BIODYVIN-certified since 2005.
