About this wine
Character
A fragrant, cool-toned Pinot Noir. In the glass, a deep cherry red with delicate lightening towards the rim. The nose is expressive and finely drawn: morello cherry, wild raspberry, blackberry, cassis and blueberry, alongside thyme and chervil, plus a pronounced scent of violet and rose petals.
Terroir and origin
Domaine Vacheron farms 46 hectares in the Sancerrois, run by cousins Jean-Dominique and Jean-Laurent Vacheron, the fourth generation since founder Maurice Vacheron. The limestone-rich Caillottes soils lend mineral freshness, while the Terres blanches, made of marl and clay-limestone, provide depth and complexity. Jean-Dominique gained experience in Châteauneuf-du-Pape, Jean-Laurent with Aubert de Villaine in Burgundy.
Grape variety and vinification
Single-varietal Pinot Noir. The individual plots are vinified separately so that each terroir can speak for itself. The wine is made dry and reaches 14.0% vol.
On the palate
Lively and refreshing, defined by vibrant acidity, pronounced mineral notes and fine herbal spice. The fruit remains juicy and bright. A slightly cooler serving temperature suits it well.
Food pairings
It pairs especially well with herb-forward dishes and fish: grilled sea bream on rosemary red wine risotto, venison poached in oriental herb broth with couscous, or grilled beans with blackcurrants and nasturtium.
Highlights
Domaine Vacheron has been BIODYVIN-certified since 2005, one of the first estates in the region, and ranks among the pioneers of biodynamic viticulture in the Sancerrois.
