About this wine

Character

A Silvaner that favours clarity over fullness. 10.0% ABV, dry, bottled without added sulfur: a wine of cool stature that carries the taste of its elevation.

Terroir and origin

The VDP estate Odinstal sits above Wachenheim in a hollow surrounded by ten hectares of mixed forest, 350 metres above the Rhine valley. The monopole vineyard combines basalt, shell limestone, Keuper marl and yellow variegated sandstone across five hectares of vines. There are no winegrowing neighbours, and hence no spray drift either. The vines here ripen around 20 days later than in the valley.

Grape variety and vinification

Estate manager Andreas Schumann, born in 1978, follows a principle of non-intervention in the cellar: spontaneous fermentation without temperature control, extended lees ageing, minimal use of sulfur. The Nakt series takes this further still, with skin contact and no added sulfur whatsoever. Silvaner is among the varieties that benefit from the cool nights of this site.

On the palate

Bone dry and lean in build. Green apple and lime zest carry the opening, with white blossom and herbs underneath; skin contact lends a slightly bitter, phenolic grip to the finish. The acidity keeps the wine upright, and its saline length makes it drinkable well beyond the first glass.

Food pairings

Steamed asparagus, poached fish with herb butter or young sheep's cheese. Also roasted root vegetables and pasta with olive oil and lemon.

Highlights

The estate has been Demeter-certified since 2013, with the logo featured on the label. Five suckler cows graze between the vine rows, and the bees are kept by beekeeper Andreas Kramer: a closed organism run to Demeter principles.
