About this wine
Character
A sparkling wine that lives off what it lacks: Brut Nature means without dosage, so without any sugar for rounding off. What remains is pure line. White blossom, citrus fruit and green apple over a mineral base, the perlage fine and persistent.
Terroir and origin
The Kaiserstuhl is extinct volcanic land, and its soils give Franz Keller's wines their subtle minerality. The estate in Vogtsburg-Oberbergen has been family-owned since 1892 and has been run since 2016 by Friedrich Keller, the fourth generation. He calls his 35 hectares, with six VDP Grosse Lage sites, the "Burgundy of Baden".
Grape variety and vinification
Pure Chardonnay, hence Blanc de Blancs. The winery, completed in 2013, is built in terraces into the slope and works on the gravity principle, so the harvested grapes move gently from top to bottom. Uwe Barnickel and Christian Häuber vinify according to the house principle: as little as possible, as much as necessary.
On the palate
Bone dry, with taut acidity and cool fruit. In the mid-palate a creamy texture from lees ageing, which gives the acidity breadth without slowing it down. The finish remains long and saline-mineral.
Food pairing recommendations
With oysters and raw seafood carpaccio, with sushi and sashimi. Also with flammkuchen with goat cheese, asparagus with a light vinaigrette or poultry carpaccio, as an apéritif with salted almonds.
Special features
The estate's Schwarzer Adler restaurant has held a Michelin star without interruption for over 55 years; Irma Keller was the first German female chef to earn one there. In the vineyard, the gradual conversion to organic farming with biodynamic elements is under way.
