About this wine
Character
A powerful Syrah, kept lean by vibrant acidity and the cool altitude. Deep and balanced, juicy and meaty; this young wine needs air in the glass.
Terroir and origin
The Entrevon plot lies near Malaucène at 350 metres on the north side of Mont Ventoux. The sandy soil dates from the third period of the Miocene. Philippe Gimel farms his plots between 300 and 500 metres more like gardens: hedges run through the parcels, with fruit trees and aromatic herbs at the edges. The cool nights at this altitude give the wine its freshness.
Grape variety and vinification
Pure Syrah, hand-picked on 9 September 2020, 90 percent destemmed and fermented for twelve days in concrete vat. This is followed by eleven months in stainless steel and nine months in bottle. No oak is used in the cellar. 1,581 bottles, 13.5 percent alcohol, dry.
On the palate
On the nose, plum cake, then with air cassis, cherries, dark chocolate and black olive tapenade, along with a note of aged beef. The fruit stays warm and dark: forest berries, plum, cassis, a few cherries, then peat and violet. The tannin already feels fine-grained in places, yet retains a firm side.
Food pairings
Estouffade d'agneau, a lamb ragout. Cuttlefish stuffed with chard and olives. Vegetarian option: broad beans, artichokes and black olive tapenade.
Special features
Philippe Gimel gave up his pharmacy studies to become an oenologist and, together with geologist Claude Bourguignon, searched for the right site. In 2003 he found twelve hectares of old vines, without a cellar or infrastructure. Today he farms just over 16 hectares, 12.5 of which are under vine; the vines average over 40 years old, with yields of around 20 hectolitres per hectare.
