About this wine
Character
A Champagne without dosage, and therefore without anything to soften its edges. What remains is chalk, acidity and salt. The tone is cool, the structure narrow and long, the overall effect more demanding than crowd-pleasing.
Terroir and origin
The grapes come from the Terre de Vertus site, a Premier Cru slope in Vertus on the Côte des Blancs. The subsoil is pure chalk, and it's exactly that which comes through in this wine. Pierre Larmandier banned herbicides back in 1992 and converted fully to biodynamic farming in 1999, at a time when this still raised eyebrows in Champagne. The estate's 16 hectares are spread across 17 parcels between Vertus and Avize.
Grape variety and vinification
100 percent Chardonnay. Fermentation starts spontaneously with the estate's own yeasts, and ageing takes place in a large wooden foudre from the Austrian cooperage Stockinger, which lends structure without overpowering the wine. Neither fined nor filtered. Brut Nature here means literally that: not a single gram of dosage. 12.5% ABV.
On the palate
On the nose, green apple, citrus blossom and wet chalk, with yeasty notes and brioche underneath. On the palate it goes straight ahead: a vibrant acidity carries it, the minerality tastes saline, and the wine stays dry right to the very last moment.
Food pairing recommendations
With oysters, sea bass sashimi and cod with beurre blanc. Thinly sliced Pata Negra ham also works well.
Special features
Pierre Larmandier works alongside his wife Sophie and, since 2017, his son Arthur. The house's dosage is capped at 4 grams per litre, and is usually zero. The bottles even go without a capsule.
