About this wine

Character

Brut Nature here means exactly that: not a gram of sugar after disgorgement. What remains is Chardonnay in its coolest, driest form, carried by the chalk of Vertus. Pierre Larmandier sums up his approach this way: a good Champagne follows the rules of production, a great one is born when those rules are broken. This wine shows what that statement means in practice.

Terroir and origin

Vertus, a Premier Cru on the southern part of the Côte des Blancs. Larmandier-Bernier farms 16 hectares there across 17 plots, stretching as far as Avize. The soil is pure chalk. Herbicides disappeared from the vineyards in 1992, and since 1999 the estate has worked biodynamically, one of the first in Champagne to do so.

Grape variety and vinification

One hundred percent Chardonnay. Spontaneous fermentation with native yeasts, aged in large wooden foudres from the Austrian cooperage Stockinger, neither filtered nor fined. At the estate, dosage never exceeds four grams per liter, and is usually zero. For Pierre Larmandier, it is the vineyard that decides, not the cellar.

On the palate

Lemon and white peach, followed by honey and floral notes. The acidity stays taut, the texture stony, the finish saline and long.

Food pairing suggestions

Oysters, sashimi, sole in lemon butter, and mature Comté. Equally good as an aperitif.

Special features

The 1500 ml magnum. The bottles arrive without a capsule, a detail that reflects the estate's philosophy. Since 2017, son Arthur has worked at the estate alongside Pierre and Sophie Larmandier.
