About this wine
Character
A single-vineyard Champagne that reveals the chalk terroir of Vertus without dosage, and therefore unmasked. Freshly opened, it remains compact and almost closed, entirely focused on stony, mineral tones. With air, firm pear, quince, apple and wild raspberry emerge, alongside hawthorn and elderflower. Above this lies a scent of sea, shellfish and soy sauce — pure umami.
Terroir and origin
The grapes grow in Vertus, a Premier Cru on the Côte des Blancs, on pure chalk. Larmandier-Bernier farms 16 hectares there, spread across 17 parcels from Vertus to Avize. Pierre Larmandier banned herbicides in 1992 and converted the estate fully to biodynamics in 1999, together with his wife Sophie; since 2017 their son Arthur has joined them.
Grape variety and vinification
Pure Chardonnay, spontaneously fermented with natural yeasts. For ageing, the estate uses large wooden casks from the Austrian cooperage Stockinger, which give the wine structure without dominating it. It is bottled unfined, unfiltered and without dosage — as a Brut Nature. 13.0% vol.
On the palate
Taut and pronounced, with a characterful structure that challenges the palate. The fine-beaded mousse carries the cool chalky note far, with sweetness entirely absent.
Food pairing suggestions
An aperitif for the cooler season; in the company of fine dishes it truly comes into its own, for example with oysters, scallops or sashimi.
Special features
Biodynamic farming since 1999, long before this became common practice in Champagne. The house even forgoes the foil capsule.
