About this wine
Character
A Pinot Noir that puts finesse before power: aromatic depth, fine-grained tannin, terroir transparency. Structure without heaviness, complexity without opulence. In magnum, ageing proceeds more slowly, giving the wine time.
Terroir and origin
Domaine Trapet Père et Fils in Gevrey-Chambertin farms 18.5 hectares. The Chambertin accounts for just under two hectares, divided into three parcels with vines partly a century old. Jean-Louis Trapet, seventh generation, has run the estate since the 1990s and has farmed biodynamically since 1996: precise soil work, observation rather than intervention. His credo is "Les hommes passent et la terre reste" – people pass, the land remains.
Grape variety and vinification
100 percent Pinot Noir. For the Grand Crus, Jean-Louis Trapet ferments 50 to 100 percent whole clusters, moving the must and wine in the cellar by gravity. New oak is used at no more than 50 percent. The wine is dry with 13.0% Vol.
On the palate
Silky texture over fine-grained tannin, carried by dark cherry and wild strawberry, with fine oak spice and a mineral edge. The finish remains long and lean.
Food pairings
Roasted pheasant breast, saddle of venison with juniper, braised Bresse chicken with morels, pink-roasted duck breast or veal fillet with truffle jus. Also pairs well with mature, mild Comté.
Special features
In the 1880s, Arthur Trapet secretly grafted vines onto American rootstock, then forbidden, legalised in 1888. The Guide des meilleurs vins de France awards the estate three stars, the highest rating.
