About this wine

Character

A still white wine from Champagne, dry and lean at 11.5% Vol. It's not richness that carries it, but tension: taut, focused, with a texture that offers resistance and gives the wine its energy.

Terroir and origin

The grapes grow in Landreville in the southern Champagne region. Charles Dufour, born in 1982, took over his grandfather Robert's six hectares in 2006 and immediately switched to organic farming. He also vinifies the harvest of his mother, Françoise Martinot.

Grape variety and vinification

The cuvée is based 75 percent on Pinot Noir, complemented by Chardonnay and Pinot Blanc. Coteaux Champenois refers to the still wines of Champagne, here without a second fermentation in the bottle. In the cellar, Dufour works with wild yeasts, bottles without filtration and adds only minimal sulphur.

On the palate

The opening brings ripe apple and yellow pear, along with brioche and an herbal spice note. The acidity remains racy and carries through to the finish, where a saline note lingers.

Food pairings

Pairs with pan-fried turbot with lemon butter, seafood risotto, poultry with morels and delicate veal dishes. Aged Comté also finds a fitting partner here.

Special features

Still wines are the exception in Champagne, and this one is made in a small, limited quantity. Organic farming since 2006, spontaneous fermentation, no filtration, minimal sulphur.
