About this wine
Character
This premier cru from Volnay favours finesse over power: brightly built, with clear fruit carried by firm acidity. Dry, 13.5% Vol. It is already approachable in its youth, yet has the substance to age in the cellar for years to come.
Terroir and origin
The Carelle sous la Chapelle site lies in Volnay on the Côte de Beaune. The domaine's eight hectares are spread across 29 parcels in Volnay, Pommard and Beaune, tended by a team in which one person is sometimes responsible for just a few hectares. In winter, cover crops protect against erosion; in summer, they regulate moisture. Synthetic products and herbicides are excluded, yields stay low, and the share of manual work is high.
Grape variety and vinification
Single-varietal Pinot Noir. Whole-cluster fermentation and spontaneous fermentation are standard practice; the wine then ages, depending on the vintage, for 15 to 20 months in oak barrels, with new wood kept below 50%. For his premiers crus, Thomas Bouley chooses barrels that frame the fruit rather than overlay it. Fining and filtration remain the exception.
On the palate
Silky texture and fine-grained tannin, with clear fruit of morello cherry and raspberry, violet and smoky oak spice over an earthy undertone. The acidity holds the wine upright and carries it into a long finish.
Special features
Thomas Bouley joined his father Jean-Marc at the domaine in 2002 at the age of twenty and decisively transformed the way of working. He farms organically without certification and documents his practice through the Vignerons Engagés label; cosmic rhythms inform pruning and bottling, though he does not fully adopt the biodynamic rulebook. Bottling takes place at the domaine in Volnay.
