About this wine

Character

This Volnay favours finesse over power. Silky texture, fine-grained tannins, with notes of sour cherry and violet. A Pinot Noir full of energy that delights young and rewards years in the cellar.

Terroir and origin

Volnay is Pinot Noir country, lying between Pommard and Meursault. Jean-Marc and Thomas Bouley farm eight hectares across 29 plots in Volnay, Pommard and Beaune. Thomas Bouley joined his father's domaine in 2002 at the age of twenty, and works with a team in which one person sometimes tends just a few hectares.

Grape variety and vinification

Pinot Noir. In the vineyard, winter cover crops guard against erosion, summer weeds help regulate moisture, no synthetic treatments, no herbicides, low yields, plenty of manual work. In the cellar, whole-cluster fermentation and spontaneous fermentation are standard practice; ageing lasts 15 to 20 months in oak barrels depending on the vintage, with new oak kept under 50 percent. Fining and filtration remain the exception.

On the palate

Juicy red fruit, sour cherry and raspberry, carried by lively freshness. The oak frames the fruit rather than overshadowing it. At 13.0% vol., the wine stays lean, with a long, clear finish.

Food pairings

Classic, unfussy cuisine: roasted duck breast, partridge with mushrooms, saddle of lamb or coq au vin. Also a fine match for porcini risotto and mature Époisses. Serve at 15 to 16 degrees.

Special features

The domaine deliberately holds no official organic certification, yet its farming is consistently organic in practice. Biodynamic influences shape pruning and bottling, without the full framework being formally adopted.
