About this wine
Character
A Pinot Noir of cool-toned stature: red fruit, fine spice, a tannin that carries rather than grips. The Domaine Rémi Jobard's hand remains deliberately restrained, so that the site itself takes centre stage.
Terroir and origin
Les Santenots is a premier cru vineyard in the Côte de Beaune. The parcels lie within the commune of Meursault, yet appellation law dictates that the red wines from here are bottled as Volnay 1er Cru. Rémi Jobard farms nine hectares; the vine rows are worked by hand, cover-cropped and left unfertilised.
Grape variety and vinification
Pure Pinot Noir. In the historic vaulted cellars, the wines age for around 15 months in 600-litre casks from Austrian cooper Stockinger, built from French, Austrian and Slavonian oak. The larger volume means less wood contact per litre and a slower oxygen exchange; only about a fifth of the casks are renewed each year. This is followed by a rest in tank. 13.0% vol., dry.
On the palate
Medium, bright ruby red. On the nose, cherry and raspberry, followed by fine spice and a floral note. Juicy and finely structured, the tannin silky, the finish mineral and long.
Food pairings
With rosy roasted saddle of lamb, beef fillet, roasted pheasant breast or a tender veal chop. Equally good with sautéed porcini mushrooms and Brie de Meaux.
Special features
The domaine converted early: artificial fertilisers and pesticides disappeared in 1994, herbicides in 1998. Cordon pruning limits yields. The wines are bottled unfiltered, gaining their stability from two winters of ageing rather than from technical intervention.
