About this wine
Character
A Pinot Noir of translucent clarity and alert energy, delicately built, with tannin that draws the contour rather than padding it out. The magnum format slows maturation and lets the taut structure emerge more clearly.
Terroir and origin
Santenots is a Premier Cru site in Volnay on the Côte de Beaune. Pierre-Henri Rougeot farms 12.6 hectares with parcels in Meursault, Volnay and Pommard, biodynamically and entirely by hand in the vineyard; tractors are used only minimally. His conviction: there can be no good wine from poor soil.
Grape variety and vinification
Pure Pinot Noir. The grapes remain whole-cluster, and whole-cluster fermentation begins spontaneously with native yeasts. Ageing takes place in 228-litre Burgundy barrels with a low proportion of new oak, in 18th-century cellars originally built for the Hospices de Beaune. No sulphur is added throughout ageing; whether a small dose is used at bottling is decided by Rougeot depending on the vintage. The wine is neither fined nor filtered.
On the palate
Forest berries and ripe cherry, alongside floral notes and an earthy spice. The wine flows juicy and silky, the tannin stays fine-grained, and the finish carries a saline, mineral freshness. 13.0% vol., dry.
Food pairing recommendations
With roasted pheasant breast, beef fillet with morel sauce, duck with quince compote or pink-roasted saddle of lamb. Aged Comté also works well.
Special features
In 2016, Pierre-Henri Rougeot ended his father Marc's supermarket business, refocusing the domaine on quality wines and sulphur-free ageing. The diagonally striped labels identify these cuvées.
