About this wine
Character
A mature Blanc de Blancs from a single plot in Oger, wine-driven in expression and silky in texture. This Champagne doesn't rely on cutting freshness but on ripe fruit and fullness, drinking openly from the very first sip.
Terroir and origin
The single vineyard Les Montchenevaux au Levant lies in Oger, a Grand Cru village on the Côte des Blancs; the vines were planted there in 1962 on chalky soil. From Avize, Waris-Larmandier farms nine hectares across the Grand Crus of Avize, Cramant, Chouilly, Oger and Le Mesnil-sur-Oger.
Grape variety and vinification
Pure Chardonnay, hand-harvested and pressed in a traditional Coquard press with a 4,000-kilogram capacity; only the juice from the first pressing was fermented. Fermentation and ageing took place spontaneously in 600-litre Burgundian demi-muids, with malolactic fermentation setting in on its own after the alcoholic fermentation. The wine spent at least five years sur lattes, was hand-disgorged, and received no dosage.
On the palate
Light golden yellow, with a fine mousse. On the nose, ripe yellow apples, quince, plums and nectarines, alongside oranges, dried fruit and a touch of fruit esters, plus dark-roasted praline, tobacco and notes from the wood ageing. On the palate, ripe and expansive, round, with restrained acidity and a mouthfeel reminiscent of fruit juice.
Food pairings
Pairs well with duck in Champagne reduction with green asparagus and morels, sea bass with artichokes and rouille mayonnaise, and pâté en croûte.
Highlights
Bottled at 4.5 bar instead of the usual 6 bar, which makes the bead finer and the mousse creamier. Jean-Philippe Waris has overseen vinification since 2009, having trained with Benoît Lahaye, and converted the nine hectares to biodynamic farming in 2011; the estate has been Demeter-certified since 2020. No sulphur is added until bottling.
