About this wine
Character
A Blanc de Blancs without dosage, whose tension comes from chalk and salt. The minerality lends pressure and energy, while the fruit stays bright and zesty.
Terroir and origin
The grapes grow in the Grand Cru villages of the Côte des Blancs: Chouilly, Cramant, Avize, Oger and Mesnil-sur-Oger. The vines are at least 50 years old. The blend is based on the 2015 vintage, complemented by 30% from a solera started in 2012.
Grape variety and vinification
Pure Chardonnay, hand-harvested and pressed in a traditional Coquard press with a capacity of 4,000 kilograms. Only the first-press juice is fermented, spontaneously, partly in stainless steel tanks and partly in 600-litre demi-muids from Burgundy. Malolactic fermentation likewise proceeds spontaneously. The base wines mature for six to 18 months, after which the champagne rests for 24 to 36 months sur lattes. The dosage is 0 g/l.
On the palate
Bright and clear on the nose: lemon, lime and a touch of mandarin, alongside mint and verbena, peach and apple, underpinned by brioche, oyster shell and stone. On the palate, ripe fruit with a stony, chalky undertone and a pleasant salinity. The mousse is fine and lightly creamy, with a lingering finish of vanilla and almond cream on brioche.
Food pairing suggestions
Lightly aged goat's cheese with ash, sashimi with a dash of teriyaki sauce or Bresse chicken blanquette with morels.
Special features
The bottle pressure is 4.5 bar rather than 6, giving a finer perlage. Jean-Philippe Waris has overseen vinification since 2009 and converted the nine hectares in 2011; the estate has been Demeter-certified since 2020, with the logo featured on the label.
