About this wine
Character
The Ambvivalent 2018 is an orange wine made from red Xarel·lo, grown in the Alt Penedès and fermented on the skins for ten days. At 11% alcohol it stays lean, yet comes across as full-bodied and layered: fresh, vibrant, finely spiced throughout.
Terroir and origin
The vines grow in the Alt Penedès, Catalonia's highest subzone, at altitudes of up to 600 metres. Forests surround the plots, and wild fennel, Catalan daisies and wild radish grow between the rows. Ton Mata sees the vineyard as an ecosystem in which insects and small animals are co-creators. The cool nights at this altitude bring freshness and tension to the wine.
Grape variety and vinification
Red Xarel·lo is an intermediate grape variety whose berry skin turns pink as it ripens; according to Spain's Ministry of Agriculture, there were 271 hectares of it in the country in 2022. The grapes come from biodynamic viticulture, ferment on the skins for ten days, and are bottled unfined, unfiltered and only minimally sulphured.
On the palate
The nose is refreshing and lightly tannic, with invigorating wild herbs and crisp apple, clean and precise. This spiciness carries through onto a firmly structured palate and into a long, invigorating finish. The wine tapers off beautifully, easy-drinking in the best sense of the word.
Food pairings
Serve with grilled tuna and sushi.
Special features
Celler Credo is the Recaredo family's still-wine project; Ton Mata leads it in the third generation, and since 2017 Nuria Arteaga has been responsible for the wines. Biodynamic certification followed in 2010, the first in the Penedès. Horses plough between the vines, and sheep graze there in winter.
