About this wine

Character

This Brut Nature draws its character from tension and limestone, not fruit. The red berry fruit stays restrained, with lemon zest, herbs and chalky minerality setting the tone. At 12.0% ABV, a multi-layered champagne with gastronomic potential.

Terroir and origin

Côte des Bar, in the south of Champagne. The grapes grow on south-facing, limestone-rich parcels near Buxières-sur-Arce, on Kimmeridgian marl from the Jura, rich in fossilised marine shells. Benoît Doussot had the parcels studied for their geology together with soil scientists Claude and Lydia Bourguignon, and vinifies them separately.

Grape variety and winemaking

Pure Pinot Noir. After whole-cluster pressing, the base wine ferments spontaneously and ages for 15 months in used oak barrels. Doussot favours barrels of 500 to 600 litres, as they keep the wines leaner and require less sulphur. The 2023 vintage was disgorged in September 2025, with no dosage.

On the palate

Pale salmon pink in the style of an œil de perdrix, with a fine, persistent perlage. The nose is still youthful and marked by subtle reduction, behind which lie wild strawberry, raspberry and blackberry, grapefruit, lemon zest and cool limestone, plus blossom, bread dough and beeswax. On the palate the fruit stays in the background; vibrant acidity, herbs, pronounced chalky minerality and a saline finish carry the wine.

Special features

Clandestin is a micro-négoce: Benoît Doussot buys exclusively organic grapes from eleven partner growers in the Côte des Bar, supports them in converting to organic farming and pays fair prices. The growers get to taste the finished wine, instead of seeing their grapes vanish into anonymous blends. His winery, completed in 2023 in Landreville, allows gravity-flow vinification across two levels, without pumping.
