About this wine
Character
The BORÉAL Brut Nature 2022 is a single-varietal Pinot Noir from north-facing sites in the Côte des Bar, bottled without dosage. Straw yellow with delicate apricot reflections and persistent perlage. The nose sits between moderate autolysis and citrus: sourdough bread crust, salted hazelnuts, green almonds and warm brioche, underscored by zests of citron and candied orange peel, tart cranberry and a pronounced saline note.
Terroir and origin
Three plots in the Côte des Bar in the Aube, facing due north, on similar clay and limestone soils over Kimmeridgian marl rich in marine shells. The vines are at least 20 years old and come from biodynamically farmed vineyards; only ripe, flawless grapes are processed.
Grape variety and vinification
100% Pinot Noir. Each plot is vinified separately, fermented spontaneously with natural yeasts, with no use of pumps in the cellar. Ten months of ageing in neutral oak barrels of 300 to 500 litres, followed by 15 months on the lees after bottle fermentation, disgorged in September 2024. Bottled without filtration and without dosage, Brut Nature. 12.0% ABV.
On the palate
The entry is immediately present: full, juicy fruit from the ripeness of the 2022 vintage, slightly red-fruited, creamy texture, fine-beaded mousse. In the finish the wine becomes more reduced, almost puristic, its ripe fruit meeting a precise, gripping minerality.
Food pairing recommendations
The saline streak pairs well with oysters and cockles, pan-seared scallops or sole, as well as Comté.
Special features
Clandestin is a micro-négoce: Benoît Doussot buys organic grapes from eleven partner growers in the southern Champagne region, supports them through conversion and pays fair prices. The project began together with Bertrand Gautherot of Vouette & Sorbée; since 2023, Doussot has worked in his own winery in Landreville, built on two levels for gravity-flow vinification.
