About this wine
Character
An uncompromising Blanc de Noirs from the southern Champagne region: dry, linear, with great tension and transparency. Bottled without dosage, it already shows remarkable harmony in the 2022 vintage.
Terroir and origin
The grapes come from limestone-rich, north-facing plots in the Côte des Bar, whose vineyards sit on Kimmeridgian marl, a Jurassic limestone rich in marine shells. The north-facing orientation brings out the cooler, more linear side of this terroir, evident in the saline freshness and the note of wild strawberries.
Grape variety and winemaking
Single-varietal Pinot Noir from organically farmed sites. After whole-cluster pressing, spontaneous fermentation begins under controlled temperature; the base wine ages for twelve months in 500- to 600-litre barrels, then spends a winter en masse in tank. Bottle fermentation is followed by a long lees ageing, at least 15 months sur lattes. The 2022 vintage was disgorged in 2025, without dosage: Brut Nature, meaning no sugar addition whatsoever. 12.0% ABV.
On the palate
The nose is cool and distinctly citrus-driven: grapefruit, redcurrants, barberry and crisp apple over damp limestone, almonds and fresh bread dough, with delicate blossom notes and subtle autolysis. The palate stays dry and precise: crisp red and yellow fruit, citrus zest, fine herbs and chalky minerality, carried by a fine mousse and precise acidity. The finish is saline, almost chalky.
Special features
Clandestin is a micro-négoce founded in 2015 by Benoît Doussot in the Côte des Bar, after graduating from the Lycée Viticole in Beaune. He buys exclusively organic grapes from eleven partner growers, supports them through their conversion to organic farming, and pays fair prices. His winery in Landreville, completed in 2023, operates by gravity across two floors, without pumps.
