About this wine

Character

A muscular, broad-shouldered Pinot Noir whose development has barely begun. On the nose it initially appears reserved and reductive, then opens up to tobacco, bay leaf, nuts and herbal infusions, to dry underbrush and equally dry foliage. Only with air does a subtle note of ripe sweet cherries, red berries and plums emerge. Cherry red in the glass, with a violet rim.

Terroir and origin

Les Valozières lies between the grand cru vineyards Corton Bressandes and Corton Les Paulands. The 0.28 hectares were planted in 1987. The topsoil is characterized by clay, while the subsoil is rich in limestone with pebble inclusions. Domaine Chandon de Briailles in Savigny-lès-Beaune is run by siblings François and Claude de Nicolay; the family has owned the estate since 1834.

Grape variety and vinification

Pinot Noir, spontaneously fermented in a wooden vat with 100% whole clusters. The wine is then transferred by gravity into barriques and tonneaux with a small proportion of new oak, where it ages for around 14 months without any movement or racking. It is bottled with a minimal amount of sulfur, usually straight from the barrel.

On the palate

Juicy, austere and herb-driven, with the fruit remaining in the background. It is carried by a ripe, powerful tannic structure. Within the red fruit and the vibrant acidity, fine contours are already emerging that promise this wine a long future.

Food pairings

With tournedos Rossini, Gruyère and bacon soufflé, or roasted eggplant marinated in miso and honey.

Special features

The estate has been Demeter-certified since 2011 and works biodynamically; almost 14 hectares are worked entirely with horses. The cellar dates back to the 12th century, built by monks from the Abbey of Cîteaux. It is aged without fining or filtration.
