About this wine

Character

A Chardonnay that does without any oak mask, letting the fruit step back behind salt and stone. Oyster shell, fresh seaweed and wet chalk set the tone, topped with white pepper and a whole array of dried herbs: oregano, tarragon, sage, bay leaf. The fruit only speaks up quietly, with pear, quince, persimmon and a touch of mango.

Terroir and origin

The Les Saucours parcel in Savigny-lès-Beaune covers 0.5995 hectares on a mix of limestone and clay. The vines are seven years old, densely planted at 10,000 vines per hectare, and currently yield 35 hectolitres. Chandon de Briailles farms nearly 14 hectares entirely with horses; Diva, Epi, Farandole and Gipsy pull the plough through the rows, a practice no other estate in Burgundy follows.

Grape variety and winemaking

Chardonnay, fermented in 228-litre barriques and 600-litre demi-muids. The wine then ages on the lees in the same barrels for 15 to 18 months. Claude de Nicolay, cellar master since 1988, works without fining or filtration; here, Sans Sulfites Ajouté means without any added sulphur at all.

On the palate

Precise and linear, carried by chalky minerality and a fine phenolic structure reminiscent of sencha tea. Utterly saline, cool and complex, with a finish that lives on the dried herbs for minutes on end. 13.0% vol., dry.

Food pairing suggestions

Pan-seared salmon with a pine nut and leek salsa, braised veal tongue with a sweet-and-sour lentil vinaigrette, or a millet bowl with peppers, beans and sweet potato.

Special features

Siblings François and Claude de Nicolay have run the family estate since 1834, converted to biodynamics in 2005 and have carried the Demeter seal since 2011. Ageing takes place in a 12th-century vaulted cellar built by monks from the Abbey of Cîteaux. Since 2017, selected cuvées have been bottled entirely without added sulphur.
