About this wine

Character

A Grand Cru that gives nothing away. At first, the red fruit appears in the glass only as a silhouette, the spice stays subtle, and only air and time reveal the structure. François de Nicolay calls this house style neo-classical: restrained in oak, precise in fruit, with ageing potential spanning decades.

Terroir and origin

The grapes grow in the Bressandes climat on the hill of Corton, where the estate also owns parcels in Clos du Roi and Maréchaudes. From Savigny-lès-Beaune, siblings François and Claude de Nicolay farm 13.7 hectares across twelve climats in the communes of Savigny-lès-Beaune, Pernand-Vergelesses and Aloxe-Corton. Four horses plough between the rows: Diva, Epi, Farandole and Gipsy.

Grape variety and vinification

Single-varietal Pinot Noir. Claude de Nicolay has run the cellar since 1988, working without fining or filtration. Whole-cluster fermentation has been standard since 2011, with the proportion varying by vintage. At most 15 to 20 percent new oak; the red wines age 14 to 20 months in barrel, in a vaulted cellar built in the 12th century by monks from the Abbey of Cîteaux.

On the palate

On the nose, cool lingonberry and sour cherry, followed by plum tart with toasted hazelnut semolina and caramelising butter streusel, alongside hay flowers, fennel seed, ribwort plantain and green pepper. The palate immediately reveals its tailored structure: firm tannin stays in the background, the acidity is driving from the first moment, and the length points far ahead. Dry, 13.0% ABV.

Food pairings

With veal roulade with sweet chestnuts and grilled leek, with poached chicken with kale, carrot and pan-fried Schupfnudeln, and, for a vegetarian option, with hazelnut gnocchi and pumpkin ragout.

Special features

In 1989, Nadine de Nicolay banned all synthetic treatments from the vineyards; her children converted to biodynamics in 2005, and since 2011 the estate — taken over by the de Nicolay family in 1834 — has carried the Demeter certification. Against mildew, they trialled skimmed milk in place of copper sulphate. Bottlings with minimal or no added sulphur are part of the house practice.
