About this wine
Character
A vin de garde from Bandol that shows Mourvèdre in velvety rather than bold form: densely built, deep in fruit and without any showiness. Éric de Saint Victor, head of the estate since 2000, aims for sensual wines built to withstand time.
Terroir and origin
Château de Pibarnon sits at the highest point of Bandol. The vines grow in an amphitheatre opening towards the Mediterranean, on clay, limestone and chalk from the Triassic; the blue marl contains prehistoric fossils. Centuries-old, hand-stacked stone terraces, the restanques, divide the slope into around 50 hectares and 220 individual parcels, each tier with its own microclimate.
Grape variety and vinification
The blend consists of 90 percent Mourvèdre and 10 percent Grenache, picked from the best and oldest vines at a mean altitude of 250 metres. Fermentation takes around three weeks. The wine then ages for 20 months, parcel by parcel, in barriques, tonneaux and foudres of varying provenance. Cellar master Marie Laroze has worked in the estate's cellar since 2008.
On the palate
Soft, full-bodied and dense, with very fine tannins, lively acidity and a cool, stony minerality. On the nose, dark blackberries, blackcurrant, dried plum and elderberry, followed by juniper, clove, truffle and pepper, alongside vine peach, orange and violet.
Food pairings
Squab with foie gras and dried-plum sauce, saddle of hare with black truffle sauce and celeriac purée, or Salers cheese with candied black olives and rosemary focaccia.
Special features
The 1500 ml Magnum, 14.5 percent by volume, dry. A wine capable of outstanding ageing; decanted, or a day after opening, it already partners fine cuisine beautifully. The estate's gravity-flow cellar was ahead of its time when built.
