About this wine

Character

A vintage champagne that draws its shape from acidity and salt rather than dosage. Extra Brut here truly means: just a trace of residual sugar, one that doesn't round the wine off but lets it stand as it is. Quiet, serious material.

Terroir and origin

The Clos de Cumières lies behind walls dating from the 18th and 19th centuries: half a hectare, one of the oldest clos in Champagne and one of the region's few monopoles. Hervé Jestin and his brother Yann bought it from the Leclerc-Briant family, with the first harvest in 2012. The 2013 vintage was cool and late, giving the wine its taut acidity and stony grip.

Grape variety and vinification

Chardonnay and Pinot Noir in equal parts, from vines planted in the 1960s. How much sulphur a must receives is a decision Jestin makes press-lot by press-lot, dowsing rod over the juice; for him there is no uniform quantity for the whole vintage. His conviction: most of the oenological work is done before the juice leaves the press. Everything after that, he calls listening.

On the palate

Dry and lean, carried by an acidity that clears away any heaviness. Brioche, baked apple and dried lemon peel, with a saline, long finish. 12.0% ABV.

Food pairings

With pan-seared scallops, turbot or veal carpaccio. Aged Comté suits it well too.

Special features

At twenty-four, Hervé Jestin was the youngest cellar master of a major Champagne house and stayed twenty-four years at Duval-Leroy, where he pushed through biodynamics in the mid-1990s. Since 2006, his own name has appeared on the bottles.
