About this wine

Character

A Pinot Noir built on finesse: slightly translucent, intense ruby red, with a nose of fresh and slightly stewed raspberries and wild strawberries, underscored by tomato essence, vanilla, undergrowth and foliage. The reduction hasn't fully blown off yet and adds a note of struck match on top.

Terroir and origin

Auxey-Duresses lies in a valley that begins at the Côte de Beaune and leads, on the road to La Rochepot, into the Hautes-Côtes. The Moulin aux Moines vineyard is a monopole of the domaine. The Vieilles Vignes stand in the upper part of the Clos, where the limestone marl has a different composition and the slope is steeper and drier: 0.90 hectares at 300 metres above sea level, planted in the 1950s.

Grape variety and vinification

Pure Pinot Noir, hand-harvested at a yield of 38 to 44 hl/ha. Fermentation was spontaneous, with a relatively high proportion of whole clusters. The wine was aged in Burgundian pièces and tonneaux with a low proportion of new oak, neither filtered nor fined, with minimal sulphur.

On the palate

Smooth and noble, with fine yet present tannin. The acidity opens silky and quickly becomes lively. It tastes of red and dark berries, cherries and mushrooms, along with a touch of wood; the reduction remains perceptible and contributes a spicy note.

Food pairings

Wild pheasant breast on fettuccine with morel cream sauce, lamb kebab with cumin, apricots and almonds or beetroot risotto.

Special features

Clos du Moulin aux Moines was founded in 962 by monks of the Abbey of Cluny and is among the oldest wine estates in Burgundy; the cellars date back to the 11th and 15th centuries. Since 2008, Willy Roulendes has run the domaine and has converted all 16 hectares to biodynamic farming. Work in the vineyard is done by hand or with horses.
