About this wine
Character
A Chardonnay without carbonation that can hide nothing: citrus fruit, green apple and white blossom over a chalky core, the acidity running clean through the wine. Slender, almost austere, yet of clear presence.
Terroir and origin
Œuilly lies in the Marne Valley. Here the Tarlant family has tended vines since 1687, now in its twelfth generation with Benoît and Mélanie: 14 hectares spread across more than 55 parcels, each with its own identity. The estate farms organically, without herbicides or synthetic plant protection products, guided by biodynamic practices; it does not pursue official certification.
Grape variety and vinification
Single-varietal Chardonnay, fermented with wild yeasts and aged in oak barrels – a return to barrel fermentation that Jean-Mary Tarlant had already initiated when others were working in stainless steel. No malolactic fermentation, no filtration. 12.0% vol., fully fermented dry.
On the palate
Taut and saline, the acidity is palpable from the very first moment and carries through to a long, clean finish. Green apple and wet stone linger in the aftertaste, without a gram of residual sugar.
Food pairings
Oysters and sole fillet carpaccio, goat cheese with fresh herbs, steamed fish with citrus beurre blanc. The wine also holds its structure alongside sushi and green asparagus risotto, without ever overpowering the dish.
Special features
Coteaux Champenois is Champagne's still-wine appellation and the exception at Tarlant: since the 1970s the house has bottled Champagne without dosage, today accounting for over 90 percent of production. L'Enclume shows the same material without a second fermentation.
