About this wine
Character
An introverted Pinot Noir. The fruit stays restrained, carried by a velvety structure and fine-grained tannin, with a ferrous, iodine-like edge that lends the wine seriousness.
Terroir and origin
The vineyard lies in Haute-Saône on limestone and clay, planted with 5,000 vines per hectare. The vines average 30 years old and yield around 25 hectoliters per hectare. The appellation is IGP Vin de Franche-Comté, and the wine is aged at the winery in Savigny-lès-Beaune, in Burgundy.
Grape variety and vinification
Pure Pinot Noir. The whole clusters ferment for 15 days on the skins in a concrete tank, after which the wine matures for 18 months in used oak barrels, without any added sulfur. 13.5% vol., dry.
On the palate
The nose is driven by warm fruit: raspberry, mulberry, blackberry and plenty of sweet cherry, along with rosehip and red-fruit tea. Underneath lies red earth, iron and iodine, dried cranberry and fig. Red pepper, juniper and allspice season it in careful measure, while damp forest floor and undergrowth stay subtle. On the palate the fruit remains restrained, the fine-grained tannic structure leads, and the iodine-like notes give the red fruit a mature character.
Food pairings
This wine pairs well with braised guinea fowl with peach and celery, sweet-and-sour Brussels sprouts with chestnuts and grapes, and chicken croquettes with garlic-paprika dip.
Special features
For his own line, François de Nicolay doesn't buy finished wines but rather grapes from long-standing partner growers who farm organically or biodynamically. Four horses plough between the rows of vines, and skimmed milk is used against mildew instead of copper sulfate.
