About this wine
Character
A white Burgundy that shows pale, glistening golden yellow in the glass and remains nobly restrained on the nose: apple, quince and lemon, alongside lime blossom, a touch of anise and chamomile. The subtle use of oak comes through as vanilla, bread crust and pale tobacco. Elegant and supple, even before the first sip.
Terroir and origin
Wines released under the name François de Nicolay are made exclusively from purchased grapes sourced from certified organic or biodynamic vineyards, or estates in conversion. Vinification and ageing take place in the cellars of the family-owned Domaine Chandon de Briailles in Savigny-lès-Beaune on the Côte de Beaune, run by François de Nicolay together with his sister Claude and in the family's hands since 1834.
Grape variety and vinification
Chardonnay from a plot with vines averaging 30 years of age and a planting density of 10,000 vines per hectare. Fermentation takes place with no added yeasts and lasts one to six months, after which the wine ages for twelve months in barriques. No sulphur is added at any stage, as indicated by the Sans Sulfites Ajouté designation on the label.
On the palate
The elegance found on the nose continues, carried by fruit and a fine arc of acidity. The saline minerality keeps the wine lean and calls for food. Dry, at 11.0 % vol., best served not too cold and in large Burgundy glasses.
Food pairings
Swede pâté with ginger and smoked tofu, puff pastry case with bouchot mussels and Pernod sauce, or roast poussin with fresh almonds and a hint of cinnamon.
Special features
François de Nicolay does not buy finished wines but grapes from long-standing partner growers. On the estate, the four working horses Diva, Epi, Farandole and Gipsy plough between the rows, and skimmed milk is used against mildew instead of copper sulphate.
