About this wine
Character
A Chardonnay that draws its stature from spice and acidity rather than fruit. The nose is wild and generous, the palate remains lean and taut. In the glass, luminous golden yellow with delicate green reflections.
Terroir and origin
The grapes grow in the Les Montelons vineyard in Mercurey, in the Côte Chalonnaise. François de Nicolay works as a négociant éleveur, buying not finished wines but grapes from long-standing partner growers who farm organically or biodynamically. Fermentation, ageing and bottling take place in the historic vaulted cellar of Domaine Chandon de Briailles in Savigny-lès-Beaune.
Grape variety and vinification
Pure Chardonnay, spontaneously fermented, aged without added sulfites. This demands flawless grapes and meticulous cellar hygiene. At 11.0% vol., the wine remains light-footed and dry.
On the palate
Spice takes centre stage: turmeric, curry, white pepper and saffron, alongside almonds, hazelnuts and pine nuts, which deepen towards nougat with air. An earthy, chalky thread carries dried grass, savory, marjoram and oregano, while the fruit stays in dried-fruit territory: apricot, date, fig. On the palate it flows silky and without edges, the acidity is pronounced and essential at once, and the nutty, ethereal nuances draw it out in length. In the finish, the spicy aromas return, with fruit playing no role there.
Food pairings
Saffron risotto, tagliatelle with seafood and tomato sugo, or thinly sliced braised celery with mushroom stock and toasted hazelnuts.
Special features
Sans Sulfites Ajouté appears on every label of this line. François de Nicolay uses skimmed milk instead of copper sulphate against mildew, four working horses plough between the vine rows, and ageing takes place in used barrels with a maximum of 20% new oak.
