About this wine

Character

Concentration without heaviness. The Vin de Paille gathers everything the drying process draws out of the grapes, yet stays lively thanks to a pronounced and at the same time elegant acidity. The sweetness is well-balanced, the spice fine, the aromatics deep.

Terroir and origin

Domaine Grand is based in Arbois and has farmed vineyards between Arbois and Château-Chalon since 1692, across nine generations. In 2015, Emmanuel and Nathalie Grand reduced the estate's size from 24 to 9.5 hectares; he oversees the cellar, she the vineyards. The vines grow on grey limestone as well as grey and red marl, partly with dolomitic influence; some plots are over 100 years old.

Grape variety and vinification

Chardonnay and Savagnin, harvested late and dried using the traditional method on wooden or straw mats. Fermentation takes place in stainless steel, followed by at least three years of ageing in oak barrels — in this case, even longer. Emmanuel Grand works with old barrels and minimal sulphur. 14.5% vol.

On the palate

The nose is rich and intense: apricot and peach, English orange marmalade, persimmon, star fruit and dried figs, backed by chestnut, nougat and nut paste. On the palate, mocha, nuts, muscovado sugar, black tea and honey, followed by ripe, candied oranges, kumquats, soft apricots and a touch of ginger. Nothing feels overdone, the acidity keeps the candied fruit in motion.

Food pairings

Iced apricots with meringue and cream, Sacher torte or baked pears with Roquefort cream and walnuts, where the wine's sweetness meets the salt of the blue cheese.

Special features

Straw wine is a matter of handwork and patience, and the half bottle is the fitting format for it. The labels are designed by French artist Bast, and the estate bottles around 45,000 bottles a year. In 2020, the Guide Hachette named Emmanuel and Nathalie Grand "Vignerons de l'année," an award given for their Château-Chalon En Beaumont Vin de Voile 2015.
