About this wine
Character
A Blanc de Blancs in which tension and minerality are beautifully drawn out, without compromising freshness. The cuvée lives up to its name: it feels iridescent, shifting between cool mineral spice and a creamy lees note. Every component has found its place.
Terroir and origin
The grapes grow at the threshold between the Marne Valley and the Montagne de Reims, in sites around Cuchery, Baslieux-lès-Fismes, Leuvrigny, Troissy and Mareuil-le-Port. Calcareous clay and alluvial soils, chalky clay and alluvial limestone marl, provide the mineral backbone. The family estate in Cuchery farms seven hectares across 35 parcels, with vines averaging 33 years of age.
Grape variety and vinification
Pure Chardonnay from the 2017 vintage, aged 100 percent in oak. The estate has farmed biodynamically since 2011, without herbicide or insecticide, using its own compost. The 1212 bottles were hand-riddled and disgorged on 5 July 2022 with a dosage of 2.3 grams, as Extra Brut.
On the palate
On the nose, delicate mineral spice and puff pastry, zests of kumquat and grapefruit, a touch of lemon curd, candied ginger and a hint of nougat, along with pear and quince, briefly tossed in brown butter. On the palate it is charming, with a fine mousse, palpable tension and a saline-tinged minerality; the oak shows as a nougat note, while the sweetness stays restrained.
Food pairings
Seafood étagère, pan-seared scallops and pork belly with kumquat chutney, or gratinated goat cheese on radish carpaccio with arugula and orange mustard.
Highlights
A micro-cuvée of 1212 bottles. The house's dosages range between 1.7 and 3.5 grams per litre. The label carries the Demeter logo. Son Maxime is already working alongside in the vineyard.
