About this wine
Character
A sparkling wine for purists. Here, Brut Nature literally means no dosage: not a single gram of sugar softens the acidity, the structure stands fully exposed. The result is lean and streamlined, carried by a fine perlage and a dry, long finish.
Terroir and origin
The grapes grow on limestone and variegated sandstone of the Mittelhaardt in the Palatinate, around Gimmeldingen. The cool nights flowing down from the Palatinate Forest keep the acidity lively in the berries. Harvesting is done by hand in 8-kilo crates; no more than thirteen minutes pass from grape to press.
Grape variety and vinification
Pinot Noir, Chardonnay and Pinot Blanc make up this Burgundy-style cuvée, which in the estate's numbering system carries all the numbers in the 200 series; the last digit records the disgorgement, here the fourth. Fermentation happens spontaneously in a large wooden barrel, after which the sparkling wine rests for at least 31 months on the lees. No sulphur, no fining, no dosage.
On the palate
The sparkling wine shows ripe apple and yellow pear, along with lemon zest and a subtle yeasty note brought by the long ageing. The acidity remains vibrant, the minerality carries the dry finish.
Special features
The estate was founded in 2019, when Steffen Christmann, an eighth-generation winemaker and VDP president, brought together twelve hectares of vineyards with his daughter Sophie Christmann and Mathieu Kauffmann, thirteen years Chef de Cave at Bollinger. Christmann & Kauffmann is Germany's first fully biodynamic sparkling wine estate and works according to the respekt-BIODYN guidelines.
