About this wine
Character
A crystalline, finely spiced Sauvignon Blanc from Pouilly-Fumé. The nose evokes maritime associations: oyster shells and salty sea breeze, alongside delicate kitchen herbs such as chervil, coriander and borage, white pepper, grapefruit zest and yellow stone fruit. Light yellow in the glass with a silvery edge, dry on the finish, 13.0% ABV.
Terroir and origin
Domaine du Bouchot farms 10 hectares in Saint-Andelain and was the region's first certified biodynamic estate. The Terres Blanches consist of weathered Saint-Doulchard marl, densely packed with fossils of the oyster Exogyra virgula and threaded with thin layers of iron-rich glauconite. This subsoil brings out the fruity, floral side of the estate.
Grape variety and vinification
Sauvignon Blanc, spontaneously fermented with indigenous yeasts in stainless steel tanks. Antoine Gouffier, who runs the estate with Ilse Nel, works without enzymes and without fining, adding only a small amount of sulphur before bottling. After twelve years abroad, including stints in New York, Argentina and South Africa, he seeks riper fruit without giving up freshness.
On the palate
Liquid stone: austere minerality meets cool fruit, the fine-grained grip recalling chalky salt licks. Ripe acidity and the cedary-citrus notes of white pepper keep the wine in tension.
Distinctive features
In 2009 du Bouchot became the first estate in Pouilly to be certified organic; since 2020 all wines have carried Demeter certification, whose logo appears on the label. Gouffier has renovated the cellar, experiments with amphorae and produces the appellation's only maceration wine.
