About this wine
Character
A dry maceration wine at 12.5% vol., with a pale straw-yellow colour one wouldn't expect after five months on the grapes. Extract, liquorice and a light bitterness from the skins provide the backbone, while the wine stays juicy and aromatic on top.
Terroir and origin
The grapes grow on the small Les Coûtes du Bout plot in Saint-Andelain. The soils here are predominantly Caillottes, limestone from the Oxfordian and Kimmeridgian eras. They lend the wine its dense mineral intensity, which here also shows up as juiciness. Antoine Gouffier has run Domaine du Bouchot since 2018 together with Ilse Nel.
Grape variety and winemaking
100% Sauvignon from 45-year-old, biodynamically farmed vines. Vinification takes place entirely in wood: five months of maceration on the grapes, followed by gentle pressing and a further six months of ageing in the same barrels. Fermentation is spontaneous, with indigenous yeasts, without enzymes or fining, and only minimal sulphur additions shortly before bottling.
On the palate
The nose stays clean and fine, with pomelo and ginger, apple and apple skin over a pleasant floral scent. Ageing has smoothed out the acidity of this cool vintage, keeping structure and fruit in balance.
Food pairings
Pan-seared scallops on chorizo with orange beurre blanc, crab risotto with fennel fronds, or yellow beetroot cooked in embers with salt and fennel pollen.
Highlights
The appellation's only maceration wine, born out of curiosity: "We don't make red wines at the estate, so we make a maceration just for fun," says Antoine Gouffier. In 2009, du Bouchot became the first estate in Pouilly to be certified organic; since 2020, all its wines have carried Demeter certification.
