About this wine

Character

An aromatic, complex and elegant Sauvignon Blanc that in the 2023 vintage comes across as clear, focused and precise, lively yet sensual at the same time. Medium straw yellow in the glass, with pear, ripe lemon and a few gooseberries and white currants on the nose, followed by yeast, fennel pollen and blanched almonds with subtle herbal notes. A nobility all its own.

Terroir and origin

The grapes grow in the Terres Blanches of Saint-Andelain: white clay over marl and Kimmeridgian limestone with a high proportion of oyster fossils. The Les Coûtes and Les Sapins plots, 0.46 hectares in total, were planted in 1955, which is why the Roman numeral MCMLV appears on the label. They form the estate's oldest vineyard, taken over by Antoine Gouffier in 2018.

Grape variety and winemaking

Sauvignon Blanc, spontaneously fermented with indigenous yeasts, with 24 to 48 hours of skin contact depending on the plot. No enzymes or fining agents, with minimal sulphur added only shortly before bottling. 13.0% vol., dry.

On the palate

First comes the silky texture, which also offers grip, and a very light tannin that is barely noticeable alongside the elegance and creaminess. Juicy and finely spiced, with mineral notes and pale fruit, lemon zest, crushed stone, a hint of iodine-tinged sea spray and white pepper. A bright, energetic wine.

Special features

Du Bouchot was the first estate in Pouilly to be certified organic in 2009, has worked biodynamically since 2015, and its wines have carried Demeter certification since 2020. The MCMLV is the estate's flagship: a wine of density and ageing potential from vines with over six decades of root depth.
