About this wine

Character

A sparkling wine with a creamy texture and a saline core: extended lees ageing gives it breadth and depth, while disgorgement without dosage keeps it dry and clear. Approachable and charming, yet complex.

Terroir and origin

The four hectares of the Vincendeau estate lie on the Corniche Angevine, a protected escarpment above Rochefort-sur-Loire, with views over the river as far as the island of Béhuard. The vines are rooted in green and purple schist, in spilite and phthanite of volcanic origin, interspersed with quartz. These poor, stony soils limit yields to a maximum of 45 hectolitres per hectare.

Grape variety and vinification

100% Chenin Blanc from vines aged between ten and eighty years, spontaneously fermented. The bottles age in the tuffeau cellars of Saumur at a constant eleven degrees, considerably longer on the lees than the nine months required by the Crémant de Loire appellation; hence Dégorgement Tardif, the late removal of the lees sediment. Bottled without dosage.

On the palate

On the nose, quince, baked apple, brioche, honey and salted almonds, along with a delicacy reminiscent of white flowers. On the palate, creamy texture with finely integrated bubbles, a mineral core, with hints of salted lemon.

Food pairings

As an aperitif and with creative cuisine.

Special features

Demeter-certified since 2020, the seal appears on the label. Liv Vincendeau studied chemistry in York and Strasbourg, came to Anjou as a chemist, and has run the estate since 2014. She handles pruning, canopy management, harvest, vinification and sales largely by herself, assisted by a few seasonal workers and her family. Around 16,000 bottles per year.
