About this wine
Character
A Crémant de Loire of linear dryness and quiet depth. The term Dégorgement Tardif refers to late disgorgement: the wine rests on its lees for a long time before the sediment is removed from the bottle. This shows in notes of white bread crust, fresh herbs and shell.
Terroir and origin
The vines stand on the Corniche Angevine above Rochefort-sur-Loire, a protected steep slope with views over the Loire as far as the island of Béhuard. The soil: green and purple shale, along with spilite and phtanite of volcanic origin, interspersed with quartz. These stony, stark sites limit yields to a maximum of 45 hectoliters per hectare.
Grape variety and winemaking
Pure Chenin Blanc from vines between ten and eighty years old. Liv Vincendeau, born in Darmstadt and trained as a chemist, ferments spontaneously and forgoes any dosage. The bottles age in the tuffeau cellars of Saumur at a constant 11 degrees; Crémant de Loire regulations require nine months of aging on the lees.
On the palate
Pale straw yellow, persistent perlage. Dry and dense, the texture creamy, carried by lively acidity and saline minerality.
Food pairings
With oysters, sole or roasted turbot, as well as with smoked char. And with young goat cheese from the Loire Valley, such as a Sainte-Maure de Touraine.
Special features
Demeter-certified since 2020, the logo appears on the label. Liv Vincendeau has farmed four hectares since 2014 and bottles around 16,000 bottles a year; she handles pruning, canopy work, harvest and winemaking herself, supported by a few seasonal workers and her family. 12.5% Vol.
