About this wine
Character
A dry Crémant de Loire made from pure Chenin Blanc, vinified Extra Brut and therefore with no sweetening balance. The approach is purist: spontaneous fermentation, no dosage. What remains is acidity, salt and the white bread crust note from lees ageing.
Terroir and origin
Liv Vincendeau has farmed four hectares on the Corniche Angevine since 2014, a protected steep slope above Rochefort-sur-Loire with views over the river as far as the island of Béhuard. The vines are rooted in green and purple shale, in spilite and phtanite of volcanic origin, interspersed with quartz. These poor, stony soils limit the yield to a maximum of 45 hectolitres per hectare.
Grape variety and vinification
The base comes from Chenin Blanc vines between ten and eighty years old. The base wine ferments spontaneously, and the second fermentation takes place in the bottle. Ageing takes place in the tuffeau cellars of Saumur at a constant 11 degrees; in magnum format this ageing proceeds more slowly.
On the palate
The attack is taut, the acidity clearly defined. This is joined by green apple and citrus blossom, underscored by garden herbs and shell notes. The bubbles remain fine, the finish is dry, saline and long.
Food pairings
With oysters and a platter of chilled seafood, with pan-seared scallops, with steamed turbot and with Loire goat cheese.
Special features
The Vincendeau estate has been Demeter-certified since 2020 and produces around 16,000 bottles a year. Pruning, harvest and vinification are largely handled by Liv Vincendeau herself, who studied chemistry in York and Strasbourg. The 2021 vintage was rated 91 out of 100 by RVF.
