About this wine

Character

A dry rosé Crémant of lean build: red fruit, a herbal edge and an acidity that keeps the wine upright. Made Extra Brut, meaning sparingly dosed, it stays cool and clear.

Terroir and origin

Since 2014, Liv Vincendeau has farmed four hectares on the Corniche Angevine, a protected steep slope above Rochefort-sur-Loire with views over the Loire as far as the island of Béhuard. The soils consist of green and violet schist, spilite and phtanite of volcanic origin, interspersed with quartz. Poor and stony, they keep yields to a maximum of 45 hectolitres per hectare.

Grape variety and vinification

Cabernet Franc and Grolleau, two Loire varieties. Fermentation runs spontaneously, and the bottles age in the tuffeau cellars of Saumur at a constant eleven degrees. Liv Vincendeau, born in Darmstadt and trained as a chemist with studies in York and Strasbourg, handles pruning, canopy work, harvest and vinification largely herself, and checks the maturing Crémants bottle by bottle against the light.

On the palate

Redcurrant and strawberry, alongside blood orange, blossom and a fine yeasty note. The wine stays crisp and direct, with mineral pull and a dry finish.

Food pairings

Oysters and seafood, smoked salmon or salmon tartare, alongside asparagus with vinaigrette and grilled vegetables. Also good with sushi, charcuterie or a fresh goat's cheese quiche.

Special features

Demeter-certified since 2020, the logo appears on the label. The whole estate produces around 16,000 bottles a year.
