About this wine
Character
A nobly sweet Chenin Blanc that never flaunts its sweetness: acidity, salinity and spice push back against it. Dense, elegant and self-contained, at 12.5% ABV, with a finish that lingers far beyond the moment.
Terroir and origin
Le Mont faces south on the first plateau of Vouvray, directly above the estate's tuffeau caves, and ranks among the most prized vineyards of the appellation, celebrated for its history and long-lived wines. Nine hectares of flinty, silica-rich soil over deep clay give the Chenin Blanc intensity, minerality and a refined structure, carried by beautiful acidity.
Grape variety and vinification
100% Chenin Blanc. A Moelleux 1ère Trie made from nobly rotten grapes comes together only in exceptional years, since it is the weather, not the winemaker, that decides whether botrytis develops. Cellar master Benjamin Joliveau, a native of Vouvray, has overseen the wines since 2020; ageing takes place in neutral vessels within the estate's deep rock-hewn galleries, at a constant temperature.
On the palate
The nose shows dried apricots, orange zest, orange marmalade, quince, apple, white chocolate and acacia honey, with passion fruit and ginger emerging after extended breathing. The palate echoes this layered complexity: sweetness, fresh acidity, penetrating minerality, gripping salinity, lively spice. Decanting and large glasses help, as would a few more years of patience.
Food pairing recommendations
Terrine of non-force-fed goose liver with fresh apple, spicy Thai salad with star anise, cinnamon and beef fillet strips, or baked elderflowers with white ginger and chocolate ice cream and Vouvray sabayon.
Special features
Gaston Huet introduced biodynamic farming as early as the late 1980s; the entire estate has been Demeter-certified since 1993.
