About this wine
Character
Medium garnet, a clear and present nose: wild strawberries, forest floor and undergrowth, interspersed with hints of blood orange. A sweet note, a dark earthy note and freshness sit side by side in the bouquet. Depth and structure point to remarkable ageing potential.
Terroir and origin
The Les Champs de Vosger vineyard lies below the village of Fixin, on light, sandy soils. There, 70-year-old vines are rooted, part of which forms the sélection massale. Work in the vineyard is organic, partly biodynamic, and correspondingly labour-intensive.
Grape variety and vinification
Pure Pinot Noir, largely destemmed, fermented in tanks, exclusively with indigenous yeasts. Twelve months' ageing in used 228-litre oak barrels with a small proportion of new wood. No fining, no enzymes, a light filtration if needed, no sulphur or only in very small doses. 13.5% Vol., dry.
On the palate
The entry is dark-fruited, with extract and extract sweetness, juicy and charming. The acidity remains well to the fore, as does the dark spice. Towards the finish the wine becomes drier, and liquorice gains presence.
Food recommendations
With herbed pointed cabbage and potato gratin with Gruyère, with spiced rice with lamb, chicken and garlic yoghurt, or with roasted aubergines with tomatoes and tahini.
Special features
Jérôme Galeyrand arrived in Burgundy without a winemaking family behind him: eight years in the cheese trade, then the wine school in Beaune, and in 2002 a first plot of 0.05 hectares. Today the domaine in Saint-Philibert spans 5.25 hectares, vinified in the small cellar at his home, around 24,000 bottles a year. In 2020 he received a star in the Guide des Meilleurs Vins de France.
