About this wine

Character

A finely woven white wine from Trentino, clear straw yellow in the glass, dry, at 12.0% vol. The nose opens with liquorice, apricot, apple and pear including their skins, plus quince, chamomile, beeswax and a herbal tincture, later joined by nutmeg and linden blossom. Understated in its expression, yet penetrating.

Terroir and origin

The Fontanasanta vineyard lies above Trento, with vines growing in calcareous clay soils. Elisabetta Foradori has run the estate in the Campo Rotaliano since 1984; today 28 hectares are Demeter-certified, and since 2013 her son Emilio has been responsible for winemaking.

Grape variety and vinification

One parent of Nosiola comes from Valais, the other remains unknown to this day; only around 70 hectares of the variety remain. Leaving the thick-skinned grapes on their skins for an extended period was once common practice, and Foradori has revived it. Fermentation and ageing take eight months in cellar amphorae called tinajas, with a small portion maturing in acacia wood barrels.

On the palate

The wine is directly present, with the extended skin contact lending grip and texture. A fine, slightly sweet yeast note sits within a fully fermented wine; the soft, silky acidity carries ripe yellow stone fruit, yellow apple and quince, along with a hint of bitter citrus peel and, once again, liquorice. With air and warmth, almost at room temperature, it becomes deeper and silkier, with a touch of white tea and blossom.

Distinctive features

The label carries the Demeter logo. Ageing on the skins also helps preserve a grape variety of which very little acreage remains.
