About this wine

Character

The Gevrey-Chambertin "En Billard" 2021 is a pure Pinot Noir from the Côte de Nuits that favours transparency over power. Silky texture, dark cherries, forest floor and a hint of spice, vinified dry at 13.5% vol.

Terroir and origin

The site En Billard lies in Gevrey-Chambertin, just a few steps from the estate's barrel cellar. The vines were planted in 1983, and the vineyard work is organic, partly biodynamic, and correspondingly demanding. Jérôme Galeyrand farms 5.25 hectares in the northern Côte de Nuits, from Marsannay through Fixin to Gevrey-Chambertin.

Grape variety and vinification

Pure Pinot Noir, 70 percent destemmed and fermented in tank, using only native yeasts. It then spends 24 months in used 228-litre oak barrels with up to 25 percent new oak. No fining, no enzymes, at most a light filtration and very little sulphur. Around 2,100 bottles.

On the palate

Still reserved: the forest berry fruit is only just emerging, and the tannin still feels unresolved. Acidity defines the entry and recedes toward the finish, while spicy notes of liquorice gain presence. On the nose the wine is clear and translucent, with tangy and lightly cooked berries over a subtle oak note. The carmine red remains fairly transparent throughout.

Food pairings

Rabbit stew with onions, bacon and potato-celeriac purée, rolled suckling pig roast with fennel, saffron, cinnamon and coriander seed, or a Moroccan prune tagine with harissa and couscous.

Special features

Galeyrand arrived in Gevrey-Chambertin with no family winemaking background, spent eight years working in the cheese trade, and bought his first parcel of 0.05 hectares in 2002. In 2020 he was awarded a star in the Guide des Meilleurs Vins de France.
