About this wine
Character
A wine that stays quiet at first and grows ever more penetrating with time: dried figs and candied apricots, baked oranges and almonds, joined by burnt salted caramel, a touch of ginger and iodine. Dense and interwoven as it all seems, something bright and light-footed remains within it.
Terroir and origin
Le Haut-Lieu is the vineyard with which the domaine began. Victor Huet, a Parisian bistro owner, came to Vouvray in 1928 and acquired the estate and vineyard. The site lies on the Vouvray plateau: deep brown clay with a little flint and chalk in the topsoil, locally known as aubuis. Four metres down follows the bedrock of yellow tuffeau limestone.
Grape variety and winemaking
Chenin Blanc. Only the first grapes affected by botrytis go into the Première Trie, and whether botrytis develops at all is decided by the weather. Gaston Huet introduced biodynamic farming in the late 1980s; the estate has been Demeter-certified since 1993. The wine matured in the estate's deep rock cellars: constant temperature, neutral vessels, time. 12.5% vol.
On the palate
Dense, dark, perfectly aged. The 61 grams of sweetness carries little weight, as a lively, remarkably youthful acidity of 9.3 grams keeps it in motion. Honey, caramelised pears and apples stand alongside dark spices and mineral notes, the finish turning slightly peppery.
Food pairings
Bresse chicken with mushrooms and olives in a creamy sauce, veal ragout with quince, or pearl millet with red lentils, ginger and kumquats.
Special features
The 1993 arrives three decades after harvest, straight from the estate's treasure cellar. It was the final vintage from the old vines that also produced the legendary 1947 and 1945, before the vineyard was replanted in 1994. The bottle is correspondingly rare.
