About this wine
Character
A nobly sweet Chenin Blanc that holds two things at once: 71 g/l of residual sugar and an acidity that keeps the wine light-footed and lively. Sensuous and beguiling on first impression, concentrated and dense on the second.
Terroir and origin
Le Haut-Lieu sits on the plateau of Vouvray, on deep brown clay with a little flint and chalk in the topsoil, known locally as aubuis. The bedrock of yellow tuffeau limestone only begins four metres down. This five-hectare vineyard marked the start of Domaine Huet's history in 1928.
Grape variety and vinification
Chenin Blanc, harvested between 7 and 25 September 2020, the earliest start to harvest in the estate's history. The warm vintage produced mostly wines with residual sweetness. The grapes were meticulously sorted, pressed and fermented spontaneously; malolactic fermentation occurred only in a few individual barrels. The wine was aged in used demi-muids, at 12.5% vol.
On the palate
Broad and silky, calm, opulent at first. Then the acidity shoots into the ripe yellow fruit and the spice notes, delivering the freshness that makes the wine juicy. Notes of salted almond and salted lemon make the mouth water.
Food pairings
With an exotic ceviche of octopus, drum fish, mango and papaya, steamed banana blossom with coconut rice and mango, or a mirabelle plum tart with saffron ice cream and orange zest.
Special features
Gaston Huet introduced biodynamics as early as the late 1980s, and the entire estate has been Demeter-certified since 1993. The Moelleux 1ère Trie is made only in exceptional years, when the weather allows botrytis to develop. Since 2020, cellar master Benjamin Joliveau has been responsible for the wines; the cellars are deep rock-cut galleries.
