About this wine
Character
A rosé that relies on structure rather than fruity sweetness. The nose comes across as rusty and bloody at first, unusual and original, before rosehip, redcurrant, wild strawberry and sour cherry emerge, joined by Mediterranean herbs, mild spice and underbrush. None of this is sweet — it all stays earthy and austere.
Terroir and origin
The estate's 50 hectares of own vineyards lie on the right bank of the Bitlles, in the hilly landscape of the coster del Bitlles. The soil is distinctly calcareous; the white stones between the vine rows show it at a glance. The estate has been Demeter-certified since 2010, the first winery in the region to achieve it.
Grape variety and vinification
88% Monastrell, complemented by 12% Garnatxa Negra. Bottle fermentation takes place under natural cork, with a minimum of thirty months of lees ageing. Disgorgement is done by hand and without freezing: the cellar master releases the lees sediment purely through the skilled movement of the bottle. Bottled as Brut Nature, meaning without dosage.
On the palate
Stony, linear, with brilliant freshness and a distinctly saline clarity. The fruit stays in the background, threaded with wild raspberry, morello cherry and rowanberry, alongside damp branches and wet chalk. The medium-bodied acidity rests on this mineral, saline backbone, with a hint of shortcrust pastry in the background instead of classic yeasty spice.
Food recommendations
Pairs well with roast pheasant, roasted quail breast, wild fowl with lingonberries, smoked duck breast, arroz a la banda or braised root vegetables.
Special features
Recaredo has bottled exclusively Brut Nature since 1924. In 2019, Ton Mata founded Corpinnat together with like-minded winemakers: only estate-grown grapes, only hand-harvesting, only native grape varieties, at least 18 months of lees ageing.
