About this wine
Character
A rosé sparkling wine with no dosage, where no sweetness rounds off the edges. What remains is red fruit, acidity and chalk. Recaredo has bottled exclusively Brut Nature since 1924, and the 2022 shows this stance in a lean, clear form at 11.0% ABV.
Terroir and origin
The 50 hectares of estate vineyards lie on the right bank of the Bitlles river, in the hilly landscape of the coster del Bitlles. The soil is distinctly calcareous; the white stones between the rows of vines are impossible to miss. Ton Mata, grandson of the founder, farms the sites biodynamically.
Grape variety and vinification
Grenache and Mourvèdre, hand-harvested. The entire bottle fermentation takes place under natural cork rather than a crown cap; the cellar master removes the yeast sediment by hand, using only the movement of the bottle, without freezing. Nothing is added at the end.
On the palate
Dry and taut: redcurrant and grapefruit over a chalky minerality, with strawberry, raspberry and a floral touch of rose blossom above. The bead stays fine, the finish salty and slightly austere.
Food pairings
Grilled anchovies, pulpo a la gallega and raw scallops are the closest matches. Roasted almonds and air-dried jamón ibérico also suit this dry, cool style.
Distinctive features
In 2019, Ton Mata co-founded Corpinnat with like-minded producers, a collective brand with strict rules: only estate-grown grapes, only hand-harvesting, only native grape varieties, at least 18 months of lees ageing. Mata became co-president; the collective now numbers 16 wineries.
