About this wine

Character

Les Galipes de Coulommes Premier Cru Extra Brut 2020 is a Pinot Meunier-led Champagne from Coulommes-la-Montagne, built taut and saline, with a creamy texture and a deliberately lean dosage. Here, Meunier is the lead player, not a filler grape.

Terroir and origin

Coulommes-la-Montagne is a Premier Cru village in the northwest of Champagne, at the heart of the Petite Montagne de Reims, whose cool, damp and rugged microclimate suits Pinot Meunier well. The cuvée comes from a selection of the best plots around the village. The vines grow on clay-limestone soils above a chalk layer 150 to 200 metres deep — a nod to these chalky soils is the source of the name Galipes.

Grape variety and vinification

68% Pinot Meunier, 22% Chardonnay and 10% Pinot Noir from vines around 25 years old, hand-harvested with selective picking. Fermentation proceeds spontaneously in stainless steel tanks, malolactic fermentation is allowed to occur, and the wine is aged entirely in stainless steel on fine lees for several years. Around 40% reserve wines lend complexity, and the dosage of 1.3 grams sits within the Extra Brut range.

On the palate

The nose opens with white blossom and citrus fruit, followed by ripe peach, green apple and kumquat, underscored by brioche, toasted almonds, café au lait, beeswax and verbena. The silky mousse carries juicy lemon and peach, while precise acidity stretches a chalky, saline arc across puff pastry, toasted nuts and preserved salted lemon. The finish stays mineral and saline.

Food pairings

Oysters with shallot vinaigrette, sole in butter, guinea fowl with morels, as well as Comté or matured Chaource.

Distinctive features

Jean Servagnat studied economics, worked in Paris and London, and returned to Coulommes-la-Montagne after studying oenology in Avize. Since 2015 he has bottled his own wines: 3.5 hectares farmed biodynamically, spontaneously fermented, unfiltered, with minimal sulphur use. Annual production stands at 6,000 bottles.
